Foie gras, brioche and hazelnut crumb, shimeji mushrooms,
rhubarb and beetroot relish

Palate cleanser – mango and lime
New season’s lamb fillet croustade, wild garlic and petit pois puree,
transparent potato, sheep’s milk foam, lamb jus
