Christmas at Cassons

We hope your will join us for your Staff or friends Christmas party this year.  Available during the month of December, Tuesday to Saturday evenings.

Quite a few dates have already gone, so please book soon to avoid disappointment.

Starters

Chestnut and apple soup, cinnamon crème frâiche V

Smoked salmon roulade, lime mayonnaise, pickled cucumber, micro herbs

Pan fried pigeon breast, carrot purée, mushroom spätzle, quince gel,  red wine reduction

Goat’s cheese with macerated figs, goats cheese honeycomb, fig and walnut purée  V

Mains

Goose breast, hot red cabbage slaw, sausage and apricot bon bon, sprout tops, 

glazed carrots, sauté potatoes, jus

Slow cooked beef  ‘bourguignon’, shallots, mushrooms, pancetta, potato purée, tender stem broccoli

Sea trout fillet, pearl barley risotto, wilted spinach, tartare beurre blanc, caper berries

Open lasagne of wild mushrooms, roast garlic, hollandaise, seasonal vegetables V

Desserts

Panettone bread and butter pudding, vanilla cream mousse,apple and cranberry compote, apple crisp, maple syrup, caramelised pecans

Marquise of dark chocolate, mandarin curd and segments, vanilla ice cream, pistachio purée

Vanilla panna cotta, pomegranate seeds and jelly, sugar shards

Three fresh fruit sorbets, oat crumble, fruit garnish

Selection of English and French cheeses, crackers, shallot chutney
